Recipe of the Week: Apple Pie Oatmeal

The front door bangs open and my boyfriend shouts, “I WANT SOME APPLE PIE!”

I laugh. I’m not cooking apple pie, but it sure does smell like it.



Crockpot oatmeal is an idea I had been playing with for a while. Anyone who has attempted to cook a large breakfast for a bunch of hungry people in the mountains can tell you that the additional cooking time created by the elevation can be a killer when all you want to do is hit the trails.

This recipe should be considered a two-person batch and can be doubled or tripled if necessary. One of the best parts? Waking up on a chilly morning to a cabin or hotel room that smells like apple pie and getting to eat a “stick to your ribs” breakfast that will keep you fueled untill lunch.

Ingredients:

2 cups of steel cut oats
2 Apples
1/3 cup of brown sugar (you can add more later if desired)
1 tsp. cinnamon
2 cups of Oatmeal
4 cups water

Optional Garnishes: butter, walnuts to throw on top of each bowl the next morning.

Instructions:

1. Dice apples and throw into crock-pot, then evenly distribute brown sugar and cinnamon.
2. Pour in oats and then add water.
3. Set crock-pot to ‘low’ and go to bed. The oatmeal will be ready in 9 hours.

*Setting the slow cooker to high for 4 hours will also work, but the oatmeal will get crispy around the edges.
